Origin/Edge - Repeating and Transcoding Help

We have an Origin/Edge configuration. 1 origin, 2 edges. I can get my 1080p stream showing up on my live edge applications on the edge servers. Now I want to transcode that into various formats. The Live Edge applications have no transcoding options. Setting up the transcoding options at the origin server does not seem to make a difference.

Can someone please help me with this?
