Is it possible to stream a .mp4 from a s3 bucket via <video> so something like :
    <video src="<stream_name>.mp4"/>
and have it viewable on chrome and firefox.. I know Safari I can use the /playlist.m3u8 endpoint and it will stream but what about others?

You can use MediaCache for vod streaming of assets in a S3 bucket:

Things are changing, and there might be browser support for cupertino streaming that I am not aware of (heard something about Chrome but it didn't work in my test), but generally cupertino streaming with Wowza only plays on iOS devices, Safari browser on Mac OSX only, current VLC, and some set top boxes.
