I am recording a transcoded video in Wowza which is split into 30minute chunks. Is there a way I can burn the clock and date on the video which is being recorded?

There is a way of adding dynamic overlays on top of your live stream by using the Transcoder addon. In order to add an overlay of a clock, you will have to write your own custom code.
