It depends on your operating system, but regardless during the normal installation of Wowza it will request and then configure itself to stop and start as a service (Windows terminology) or daemon (Linux, OS X) without the need for any interaction.

Please read this section of Quick Start Guide on how Wowza can be stopped and started.

If this doesn't help then please explain which OS you have installed Wowza on and we can try some more steps.

A default Wowza Streaming Engine installation also can be started as a service.
If you are running Wowza on a Windows OS, in the list of available Windows services, you should find the two Wowza services as well:
    WowzaStreamingEngine and WowzaStreamingEngineManager

If you are running a Linux based system, you can run Wowza as a service by executing the following commands:
    /etc/init.d/WowzaStreamingEngine start
    /etc/init.d/WowzaStreamingEngineManager start

Please take a look at the "Starting (and stopping) the software" section from the "Quick Start Guide" article.
